It's been awhile since I've posted a recipe, but this one is way too simple and delicious not to share. I made it the other day for our staff lunch at church and I almost didn't have to wash the casserole dish because it was practically licked clean!
My girl was disappointed that there was none for us, so what's a mom to do but whip up another one? (Don't tell her but I had already planned to make it again!) The recipe is from the Southern Living Ultimate Quick and Easy Cookbook. It's called Caramel Apple Pie but I'm not big on calling things pie that don't have a crust on the bottom. I would just call it Easy Apple Delight.
8 medium red baking apples, peeled, cored, and thinly sliced*
1/2 cup granulated sugar
1 teaspoon apple pie spice
3/4 cup multi-purpose flour
1 cup brown sugar (I used dark)
1/2 cup butter
3/4 cup quick-cooking oats (not instant)
Preheat oven to 400 F. Place apples in lightly greased 13 x 9 inch pan. Mix the sugar and apple pie spice together and sprinkle over apples, tossing gently to coat apples. Set aside.
Combine flour and brown sugar. Cut in butter with pastry blender until mixture is crumbly. Stir in oats. Sprinkle mixture evenly over apples. Bake at 400 for 30 minutes. Serve warm with vanilla ice cream on top. Serves 12.
*Note: The fall plethora of apples hasn't made it to my grocery store yet, so I used Granny Smith apples, which worked perfectly.
Nobody asked me to share this recipe or link to this cookbook. I'm just a big fan of Southern Living recipes. And I'm so glad the temperature has dipped below 90 that it makes me want to bake!
This is my FAVORITE dessert - Hot Apple Crisp or Cobbler with vanilla ice cream. Better than chocolate! (long time no "see" by the way!)
